Stuffed Turkey Peppers
Makes 4 servings
Ingredients:
- 1/2 cup brown rice
- Pam spray
- 2 cups onions chopped (you can sub
in spinach or mushrooms for variety)
- 3 cloves garlic, chopped
- 1 lb 99% lean ground turkey
- 1/2 cup low sodium or salt free
tomato juice
- 1/2 tsp Italian seasoning
- 10 grape or cherry tomatoes (you
can sub in sun dried for variety)
- 1/4 tsp black pepper
- 4 assorted medium peppers (yellow,
orange, red or green - your choice)
- 2 oz part skim mozzarella (can
also use feta, goats cheese or goats feta for variety)
Preparation:
1. Cook rice as package instructions tell you to - set aside.
2. In a pan sprayed with Pam spray, saute onions and garlic over medium
heat for 2 minutes or until onions are translucent.
3. Add turkey and cook until no longer pink. Add tomato juice and cook
2 minutes.
4. Add tomatoes and black pepper - cook for 5 minutes. Mix in rice and
set aside.
5. Pre heat oven to 400 degrees F.
6. Cut tops off the peppers - bake peppers on baking sheet for 10
minutes or until soft, but not mushy then remove from oven.
7. Stuff each pepper until full with turkey and rice mixture - top with
mozza cheese (or cheese of choice) - place tops back on peppers.
8. Bake for another 10 minutes - or until cheese is melted
